Palak Soup! (Spinach soup)

How many in the house love green leafy veggies? Not many am sure. So I decided to come up with a yummy way to enjoy Palak (Spinach) with going *makes a bad face*
That yummy way would be by the way of, soup :D Simple, easy to make, quick, and extremely tasty *ahem* (not to mention healthy (hence the brackets) ).

Ingredients:
400 gms Spinach
2 tablespoons butter
1 cup milk
2 tablespoons all-purpose-flour (maida)
1 onion, finely chopped
0.5 teaspoon black pepper
Salt, to taste
Serves - 3
Method:
1. Wash the spinach thoroughly, peel the leaves and discard the stems. If you choose to use the stems, thats great cuz there's lotsa fiber in it! I did.
2. Wash couple of times even after they are clean; set the water aside.
3. Transfer the spinach leaves into a mixer, and make puree out of it. Set aside.
4. Heat butter in a pan. Add onions and saute until translucent and glossy (mmm can ya smell that?)
5. Add the flour and mix well, taking care that no lumps are formed.
6. Add the spinach puree, and stir for 2 minutes over medium heat.
7. Now add enough quantity of spinach-washed water into this (do not make it too watery). Stir again.
8. Add salt and black pepper and stir well.
9. Now, on sim, stir continously while adding milk.
10. Stir for 5 minutes more, and see the soup smelling yummier and yummier.
Thats it! Soup is ready!
Serving suggestion: Grate cheese and sprinkle it over the soup. Slurp slurp!
